Sochal Wangun – A Comforting Kashmiri Eggplant Dish Full of Flavor

Some recipes are more than just food—they carry memories, warmth, and the familiar feeling of home. Sochal Wangun is one such comforting Kashmiri dish that brings together simple ingredients and rich traditional flavors in the most beautiful way.
Made with tender eggplants (baingan) and aromatic spices, this dish is deeply rooted in Kashmiri home cooking. What I personally love about it is how comforting and satisfying it feels without being overly complicated. It is the kind of recipe that quietly becomes a family favorite—especially when paired with warm rice.

In many Kashmiri homes, recipes like these are passed down through everyday cooking rather than written measurements. Every household adds its own little touch, making each version feel personal and nostalgic. Today, I’m sharing my simple homemade version of Sochal Wangun, made in a pressure cooker for ease and convenience while still keeping the authentic flavors intact.
Ingredients:
• Sochal (mellow leaves) – 1 bunch (washed & chopped)
• Baingan (brinjal) – 1 medium (cubed) 🍆
• Mustard oil – 2 tbsp
• Hing (asafoetida) – a pinch
• Haldi – ½ tsp
• Red chilli powder – ½ tsp
• Salt – as per taste
• Water – little (as needed)
Method
1. Heat mustard oil in a pan till it slightly smokes.
2. Add chopped baingan and shallow fry till they turn light golden 🍆
(If you prefer, you can deep fry them as well.)
3. Remove the fried baingan and keep them aside in a bowl.
4. In the same oil, add a pinch of hing.
5. Add haldi, red chilli powder & salt. Mix well.
6. Now add chopped sochal leaves 🌿 and cook on low flame.
7. Add the fried baingan back to the pan and mix gently.
8. Cover and cook till everything becomes soft & well combined
